WHere is an easy version of a beverage featured on our latest menu. It's a batch prepared mix that's packed with flavours of the Christmas time, rendering it perfect for hosting a festive gathering. Save the extra cordial you can use for morning drinks, puddings, or for another batch of bikinis.
Bikini Recipe
Yields 10 guests
For the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Cocktail (makes 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
For the Cordial: Put all the items inside a pan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Then, remove from the stove and leave to reach room temperature entirely. Transfer into an sealable bottle, close it and store chilled, it will last for up to a month.
To make Cocktail Base: Mix all the liquids into a large bottle, leave to sit for one hour, then filter it best through cheesecloth, to ensure it's completely strained.
To serve: Pour 85ml of your batch mix into a cocktail shaker filled with ice, gently stirring lightly for about 60 seconds to cool it down. Pour to a frosted cocktail glass or a similar vessel, decorate with a few cranberries and complete it using a quick spritz of mandarin oil over the top.
